Meatball Sub Casserole

I'm back with another easy family night meal.  I've seen this on Pinterest and decided to whip up one since I had a package of meatballs left over in the freezer from the holidays.  I did a slight variation on other recipes I'd found.  For example, I omited using a mayonnaise mixture due to my garlic bread already being buttered.

I was very surprised how delicious it was, although looking at the ingredients, what's not to like?  I will say that it isn't figure friendly, but it does add a nice change up to the pizza and pasta rotation in the house. It was even more delicious as leftovers.

Ingredients: 1 package of frozen Texas toast garlic bread (mine was buttered w/out cheese)
1 package of frozen meatballs
1 jar tomato or pizza sauce
1 cup cheese (or more if that's how you roll)

Chopped Steak & Gravy - Slow Cooker

I'm back with another winter meal that is easy, fast and tasty!  Bonus this meal also left my boys plates clean!

Ingredients & Directions: 1.5-2.5 pounds of chopped/cubed steak
1 packet onion soup
1 can golden mushroom soup
1 medium onion and mushrooms, sliced (optional)
add water to desired gravy consistency (I started off with about a 1/2 of the soup can and added another 1/2 towards the end of cooking)

Throw all of the above in the slow cooker on low for 4-6 hours.  Before serving, stir up the gravy to incorporate it a little more.  Serve over/with mashed potatoes or with Amish (Kluski) noodles.

This would also be tasty with any meat that would need a longer time to cook.  Just make sure to increase the cooking time as needed.

34 Week Pregnancy Update

I've yet to post too much about this pregnancy because in all honesty it's gone very smooth and there hasn't been much to share.

Although with a little under 6 weeks left I suppose I should do some updating.

Let's See...

I had an ultrasound at 32 weeks because the doctor thought I was measuring bigger than she expected, turns out she was just about right on track weighing in just shy of 5lbs.  Doctor this week still said I'm measuring a little big, so she might let me have another ultrasound before her arrival.  I could care less about how "big" baby is and just like seeing her picture while I can.  I don't have little babies, I get it, but it isn't a big deal, no pun intended.My heartburn isn't nearly as bad as it was a month ago, but Tums are still my BFF.No cravings really except for ice water which is the lamest thing ever that a pregnant woman should be wasting calories (or lack there of) on.
