2012 Goals - 8 week Check In

So it has been about 8 weeks since I wrote my post that listed out my initial goals for 2012.  Let's see where I stand....

I'm thinking maybe of categorizing these more by season.  The new additions below will be my spring goals to accomplish by Memorial Day when school is out.
  1. obtain my pre-pregnancy weight by February --- yeah this one still isn't happening.  I'm totally depressed about it, but trying to focus on my other accomplishments.
  2. obtain my wedding weight by October and my 7 year anniversary
  3. participate in at least one 5k walk/run -- None in my sights yer, but there is one for sure I'll do in October, although that seems too far off.  Hopefully I can do one in sooner too.
  4. take a vacation with just the hubby -- we've got a destination wedding in June that we are finalizing reservations for :)
  5. read 3 "fun" books  -- 2 down, and 1 to go thanks to the Hunger Games Trilogy
  6. de-clutter this mad house --  I'm editing this one.  The room in my house that really needs overhauled is my craft room.  I'll get to this later.
  7. start saving for the kitchen remodel (this goal I hope to have in 2017) -- come on tax refund
  8. retire wearing my judging pants.  I wear them far too often and I'll probably post about them later. -- Hmm, I've been so busy lately and taking different perspectives on things which is helping me.  I definitely feel like I've been less snarky. I've still got them but at least they aren't my go-to everyday yoga pants, if that makes sense.
  9. Blog more.  I love reading blogs and I really want to put more out there in the blogosphere, but for the right reasons which is what I sort of struggle with currently.  -- Yay!  This one I have really started with and I thank all of you for reading along.  I'm having fun with this blog so far and I am finding it a great little hobby.
  10. Adopt a family next Christmas. -- got some time on this one, but I'm thinking about other directions for this one too.
Additions:

  1. Collect evidence for Master Teacher Application and begin writing narrative
  2. Complete my 2010 Scrapbook
  3. Begin my 2011 / Cameron's Baby Scrapbook
  4. Buy a new swimsuit
  5. Play outside!
Nothing to earth shattering for spring, but goals are goals

Slow Cooker Buffalo Chicken

I love spicy Buffalo Chicken and this tasty recipe was a snap to make.














I found this on Pinterest originating from here but below is my own variation and recommendations.

Ingredients:
3-4 Chicken Breasts (I used fresh)
Franks Red Hot Sauce (regular or buffalo)
Dried Ranch Dressing Mix
2-3 tbsp. butter

Preparation
Place Chicken in Slow Cooker
Pour approx. 1/2 bottle of sauce on top
1/4 to 1/2 of the dressing mix.  (I used 1/2 and found it to be too salty)

Cook on low for 6-8 hours

Shred up the chicken, add more sauce or a little water if necessary, but the chicken will shred up perfectly.
Put butter on top for about 15 more minutes, stir and then serve

**I think adding a little cream cheese to this recipe also might be a nice addition, but I'd melt that in the slow cooker prior to adding the chicken**

Pirate Party Game - Ring Toss

Why didn't I think of this?!  I came across this from Hostess with the Mostess site, my go-to party planning inspiration blog.  What an awesome game and pretty inexpensive if you were a savvy shopper and picked up the pirate hooks for $1 at Target along with some swim diving rings also in the $1 spot.

This would've been perfect for Alex's 4th Birthday Pirate Party where we played "Pin the Hook on Captain Hook".

Halloween!

I realized I never updated my Halloween Pictures.


My little guys were just adorable this Halloween and boy did they haul in the treats.

Alex dressed up as Spider Man for trick-or-treating at preschool and had a great time going around the classrooms getting goodies.

For actual trick-or-treating, Alex went as a fireman and Cameron went as his faithful companion, a dalmatian.  I have to pat myself on the back for decorating the wagon up as a fire truck. 

I liked getting into the spirit of the season.  It is such a let down when the trick-or-treaters that do come around have no costumes or manners :(

Good thing I got this up before the next holiday!
